How does thermostat work?
I have a 50 watt heater that turns off when the water is at the desired temperature (79 degrees F). Then, the water gets cold again, until it turns back on, so the water temperature undulates and the water is only at the desired temperature half of the time. Is this normal? It's a Marineland Stealth Visi-Therm Heater, which I've heard alot on being the most dependable heaters there are, but I guess I could have a defect one too.
I could be wrong because hand feeling isn't so accurate. I should use a thermometer.

Thats normal.
THe heaters doens't keep the tank at precisely the right temp, it will go a degree or so higher, then switch off, then when it drops a degree or 2 lower it switches on again.
This wont upset the fish as the temp change is only small and even in the wild they get that sort of temperture variation (or more) naturally between day and night.
BIG temp changes can upset the fish, but a few degrees is no worries.
So if the temp stays between say 77 and 80 deg everything is working fine. If the temp is fluctuating more then that then the thermostat could be faulty (if can happen) and you should replace it.
Best to check with a thermometer, sometimes (usually?) the markings in the top of the heater are not very accurate and can be several degrees out. Measure the actual tank temp, and wind the heater up or down to suit, ignoring the numbers.
